Quinoa Quesadillas

Quinoa Quesadillas are a delightful twist on a classic, blending wholesome ingredients with bold, satisfying flavors. Ready in just 25 minutes, this dish is as quick as it is delicious, making it ideal for busy weeknights or casual gatherings.

Ingredients
  

  • 1 cup Leftover quinoa salad
  • 1/2 cup black beans cooked and rinsed
  • 1/2 cup shredded cheese cheddar/jack mix or daiya
  • small handful wilty greens
  • 1/2 teaspoon chile powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 4 wheat or corn tortillas
  • optional toppings cilantro, sour cream (or greek yogurt + lemon + salt), avocado slices, store bought green chile salsa

Method
 

  1. Take your leftover quinoa salad, add some black beans and some additional spices. (to taste).
  2. Place tortilla in a small skillet over medium heat.
  3. Add filling and cheese.
  4. Fold tortilla in half and press down with the back of a spatula so the cheese melts and starts to stick everything together.
  5. Flip and cook for a few more minutes.
  6. Remove from heat, slice, and serve with whatever garnishes you like.
