Ingredients for Whole Grain Flax Waffles

Whole Grain Flax Waffles Ingredients
  • ½ cup whole spelt flour (gluten-free option: substitute with ¼ cup brown rice flour and ¼ cup sweet rice flour)
  • ¼ cup millet flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 3 tablespoons melted coconut oil
  • 1 tablespoon sugar
  • ¾ cups almond milk
  • 2 tablespoons ground flax seed
  • 1 tablespoon lemon juice
  • ½ teaspoon vanilla extract
  • For serving: seasonal fruit, butter, and maple syrup

Step-by-Step Instructions

  1. Preheat your waffle iron to high heat.
  2. Sift together the dry ingredients: whole spelt flour (or gluten-free alternative), millet flour, baking powder, and salt. (Do not include the flax seed yet.)
  3. Whisk together the wet ingredients: melted coconut oil, sugar, almond milk, ground flax seed, lemon juice, and vanilla extract in a separate bowl.
  4. Combine wet and dry ingredients: Gently mix until just combined. Avoid overmixing to keep the waffles light and fluffy.
  5. Cook the waffles: Pour the batter into the preheated waffle iron and cook according to your waffle maker’s instructions, or until the waffles are golden brown and crisp on the outside. (Tip: Let them cook a bit longer than the initial “ready beep” for extra crispiness.)
  6. Serve warm with seasonal fruit, butter, and a drizzle of maple syrup. Enjoy!

Delicious Toppings to Elevate Your Waffles

Take your Whole Grain Flax Waffles to the next level with creative toppings! Try a dollop of Greek yogurt and a drizzle of honey for a creamy-sweet combo. For a decadent treat, spread almond butter and sprinkle with dark chocolate chips. Fresh seasonal fruit like berries or sliced bananas adds a refreshing touch. Don’t forget a pat of butter and a generous pour of maple syrup for classic indulgence.

How to Store and Reheat for Freshness

Store leftover waffles in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. To reheat, pop them in the toaster or toaster oven until crisp and warm. For frozen waffles, toast directly from the freezer—no need to thaw! This method keeps them crispy on the outside and fluffy on the inside.

Quick Variations to Mix It Up

Experiment with different flours like oat or buckwheat for a unique twist. Add a teaspoon of cinnamon or nutmeg to the batter for a warm, spiced flavor. For a protein boost, stir in a scoop of vanilla protein powder or a handful of chopped nuts. If you’re feeling adventurous, fold in a handful of blueberries or chocolate chips before cooking.

Perfecting Your Waffle Iron Technique

For the crispiest waffles, preheat your waffle iron thoroughly and lightly grease it with coconut oil or cooking spray. Don’t overfill the iron—use about ⅓ cup of batter per waffle. Let the waffles cook a bit longer than the initial beep for a golden, crispy exterior. Keep cooked waffles warm in a 200°F oven while you finish the batch.
